• 2 Large sweet potato (500g)
  • 100g plain spelt flour
  • 1 Pinch Salt
  • 1 Pinch Pepper
  • 2 Teaspoons kerry gold butter
  • Bunch sage
  • Chives
  • Rocket salad


Cook the sweet potato until soft, mix the flesh with the flour until you have a dough consistency.  Boil in a rolling boil pan of hot water until they float, chill down in iced water. Now heat the butter in a pan, fry off the gnocchi with chives sage and garlic if chosen.

Serve with a fresh rocket lettuce.
