This was my most requested dish, sweet potato satay curry with the most incredible silky peanut and spinach sauce. It’s vegetarian, vegan and the perfect meat free alternative. I promise you, this is as good as curry gets. Packed full of Thai inspired flavours which jus work so well in this dish.

- 2 x tin’s coconut milk (full fat)
- 1 x lemon grass stick
- 1cm Ginger
- 1 x Lime
- 2 x Sweet potatoes
- 400g Spinach
- 2 x Cloves garlic
- 1 x Red Onion
- 1 x Bunch coriander
- 2 x Tbs peanut butter
- 3 tbs Red curry paste
- Rice to serve
