If you follow me on instagram you will know that this was requested a huge amount, this is definitely a ‘treat’ but god it’s a good one. This is my five cheese, crunchy topped macaroni cheese. The subtle use of smoked cheese and smoked paprika really make this a total game changer for what can be a bit of a bland dish. Hope you like it!
Cooking Time: 30mins
Add the onion and oil to a pan a cook until softened, add the paprika and season. To a separate pan, add flour and milk to form a roux, watch the video for method, slowly adding milk and the cheese as you go along until you get a thick rich sauce.
Add the onions to the cheese sauce and grate in more cheese.
Cook the macaroni until slightly soft and add to the cheese mix. Stir thoroughly
Pour into a oven proof dish, cover with more cheese then the breadcrumbs and the parmesan.
Place in the preheated oven at 180c for 10-15 minutes until the top is crusty.
- 1 x Onion
- 1 x tsp olive oil
- 400g macaroni
- 60g butter
- salt & pepper
- splash white wine
- 1.5 x tsp smoked paprika
- 60g Flour
- 1 x pint milk
- 250g x smoked cheddar cheese
- 150g x red Leicester
- 150g x salted cheddar
- 4 slices bread blitzed for crumbs
- 20g Parmesan cheese
