Method
Cook off the onions until nice and dark and crispy
Add the ginger to the vinegar along with the salt and pepper
Heat to a nice rolling boil
Add the noodles to seasoned boiling water and bring to a simmer.
Add the 2 x tsp sugar, soy, worcehester, ketchup, garlic and oyster sauce to a bowl and mix up.
Heat oil in a wok pan and add the chicken, cook for 1 minute then add the noodles, vegetables and fry for a minute, then add the sauce, cook for 45 seconds, add one egg to the corner of the pan and scramble into the noodles, top with onions and pickled ginger.

- 1/2 x Sliced Brown onion

- 1 x Inch piece of ginger sliced thinly
- Beetroot juice
- 1 x Tbsp sugar
- 1 x Tbsp salt
- 200ml White wine vinegar
- 2 x Soba noodle packs
- 5-6 Chopped spring onions
- 1/2 x red and green pepper
- 2 x cups beansprouts
- 1 x clove garlic
- 2 x tsp ketchup
- Soy sauce
- Worcester sauce
- 2 x tsp sugar
- 2 x Tsp oyster sauce
- 1/4 finely sliced chicken breast
