Meal prep, beef stroganoff, sweet potatoes and spinach

Everyone keeps asking about meal prep and how to make it tasty and less boring, well here it is, this beef stroganoff is insanely tasty and I’ve used coconut milk to thicken rather than double cream or creme fresh, it really works well and is packed full of flavour! Serve this up with some roasted jacket sweet potatoes and your choice of greens!. This is Meal prep next level!

Method

Add the sweet potatoes to the oven and cook for 30 mins at 180c

Season the meat with smoked paprika, salt and pepper. Brown off the meat at high heat in a small amount of oil, take out meat and deglaze pan with a small amount of butter, add mushrooms and onions, sweat off and then add two cloves garlic. Add 1 x tbs flour, add brandy to flambre then beef stock add coconut milk (thick) and reduce by 15 – 20%.

  • Sweet Potatoes (1 Per Portion)
  • 1 x Tbs Olive Oil
  • 2 x Large Rump Steaks
  • 2 x Red Onions
  • 6-8 x Chestnut Mushrooms
  • Pinch Salt
  • Pinch Pepper
  • 2 x tsp Smoked Paprika
  • 1 x Tin Coconut Milk (thick)
  • 1 x Shot (50ml) Brandy
  • 25g x Butter
  • 1 x tbs plain (spelt) flour
  • 2 x Gloves Crushed Garlic
  • Handful of spinach per portion
  • 400ml Beef Stock

Method

Mix the flour, salt, baking powder and water together and pipe into 170c vegetable oil, for 1-2 mins until golden brown.
