Vegan peanut curry

This was my most requested dish, sweet potato satay curry with the most incredible silky peanut and spinach sauce. It’s vegetarian, vegan and the perfect meat free alternative. I promise you, this is as good as curry gets. Packed full of Thai inspired flavours which jus work so well in this dish.

  • 2 x tin’s coconut milk (full fat)
  • 1 x lemon grass stick
  • 1cm Ginger
  • 1 x Lime
  • 2 x Sweet potatoes
  • 400g Spinach
  • 2 x Cloves garlic
  • 1 x Red Onion
  • 1 x Bunch coriander
  • 2 x Tbs peanut butter
  • 3 tbs Red curry paste
  • Rice to serve
