Tangy Beetroot Hummus and Avocado Toast

This is my go too snack and it’s also so good for breakfast with a poached egg on top. This is not normal hummus, it’s got a real zing to it with the fresh lemon and chilli. Keep it in the fridge, dip veg in it or serve it up on some crunchy toast.

Method

Add the beetroot, tomato past, paprika, garlic, 1/2 chilli, lemon juice, coriander powder, rinsed chickpeas and sesame oil into the blender and blitz until smooth. Add your bread to the toaster, slice the avocado and layer up the hummus then avocado and finish with pea shoots and sesame seeds.

  • 3-4 x Cooked beetroots
  • 1 x tsp Ā Tomato Paste
  • 1 x tsp Coriander powder
  • 2 x Cloves crushed garlic
  • 2 x Tsp Paprika
  • 1 x Lemon
  • 2 x Tbsp Sesame Oil
  • 1 x Pinch Salt
  • 1/2 x Red Chilli
  • Slice of Toast
  • Avocado
  • Pea shoots and sesame seeds for garnisn
